WE’RE HAVING SOUP

Well, this is going to be a different kind of blog today. My husband just loves my soups and when I interviewed him on my Youtube Channel he just happened to mention my soups. You probably know the result. I have had lots of requests for my soup recipes.

While it is too complicated to put them all on Youtube, I thought I would share a few here in my blog. So here goes!

BASIC VEGETABLE SOUP

2 large carrots

1 turnip

1 parsnip

1 large onion

2 cloves garlic

Fresh dill and parsley

5 cups water

1 14 Oz. container of vegetable or beef broth

Clean and chop all ingredients and pot with the broth and water. Turn on high until it comes to a boil and then simmer on medium low until vegetables are soft and the flavors have seasoned. Add pepper and salt to taste.

Additions: Tofu, vegetable sausage, beef, tomato sauce, or meat sausage can be added to basic recipe.

SPLIT PEA SOUP

1 large pkg dried peas

1 onion

2 carrots

1 14 oz. container of vegetable broth

5 cups water

3 Vegetable sausage or 1 ham shank

Salt and pepper to taste

Drain and clean peas. In large pot combine ingredients and bring to boil. Turn on medium low to simmer until peas are soft. When done can be served as is or ladle into a Ninja or blender to purée. Serve hot with a dot of butter on top.

POTATO LEEK SOUP

The first thing to remember when making this soup is to wash the leeks extremely well. Leek leaves can hide dirt very easily, so each, wash, wash. The flavor of leeks is with it, but be sure all the grit between the stems is gone before using.

Depending upon how much soup you want to make here are the ingredients.

6 or 7 Potatoes

1 Leek

1 onion

1 clove of garlic

1 tbs olive oil or butter

Thyme, rosemary and 2 bay leaves ( remember to remove bay leaves after cooking)

1 cup of coconut milk or canned milk

1 14 oz. container of vegetable broth or chicken broth.

Dice or slice potatoes and add all other ingredients to pot. You can sauté leeks, onion and garlic if you want, but it is not necessary. Cook until potatoes are soft.

Blend until smooth or leave chunky. Garnish with a pat of butter and parsley.

Take A Bite Of The Golden Apple

Who knew when I was raising my kids in a little one square mile town on the Jersey Shore that my family was destined to be a migratory one. My children eventually flew away one by one to find their dreams and new opportunities. I slowly closed the New Jersey chapter in my life and winged it snowbird style to Florida to experience my freedom years.  

This time of year, though, I always try to think of the upside of being a mother whose children have left me with an empty nest – it gives me lots of places to visit when I find myself in the unbearable summer heat of my tropical paradise and longing to see young faces again.

For a few days now I’ve been in Chicago visiting my daughter and enjoying as much as I can in this beautiful city of wind and water. Before attending a play at the Athenaeum last night we crossed the street to the Golden Apple restaurant for a little pre-theater dinner that gave me a déjà vu culinary journey.

The Golden Apple is the closest food experience in Chicago that reminded me of a New Jersey diner. Unforgettable. (One known fact about New Jersey, other than it being the birthplace of Frank Sinatra, it’s the New Jersey diner experience.)  

If any of my readers are fans of PBS’s program ‘This American Life’ you should be familiar with the Golden Apple. Moderator Ira Glass encompassed an entire show interviewing patrons at the Golden Apple. 

The restaurant in itself is a tiny community within a community. Local patrons go there and mix with unnoticed celebrities on a regular basis. You might say it’s a comfort zone with comfort food at comfortable prices. Something that is harder and harder to find these days. 

I guess I could share with you that I had a nice talk with the owner, we exchanged selfie’s and promised to ‘like’ each other’s Facebook pages. And I could also share that as we were about to walk into the theater a man came running across the street, a handsome old silver fox, to tell me how beautiful my dress was and that he loved the color of my hair and maybe he could take me out to dinner sometime, but those are separate stories themselves. 

I’m not quite too sure how to explain my meanderings today, but I guess it’s just that life is always an adventure and living each day to the fullest is the best reason to stay around a little longer. The unexpected moment just around the corner makes it all worth while.

If you do not allow yourself to open up, no one will ever see the beautiful flower inside of you.

A FISH TALE

  

My formative years were spent in an  industrial blue-collar town with a mixture of European immigrants. Even though it was not for religious reasons in our house we always had fish on Fridays like most of the families in our town. 

I always hated those fish Fridays because it seems every time we had fish, I was the only one in the family lucky enough to get the tiny hidden bones tucked between the flesh. How I remember chewing, chewing, chewing every bite until my jaws ached just to be sure that I wasn’t going to swallow a sharp bone that I was sure would puncture my stomach, causing the end of me. Friday’s were definitely not my favorite days. 

But, in spite of my memories of those torture fish Fridays of long ago, I guess life habits are hard to break. You would think a sane person would have left the bony protein behind as I waved good bye to that industrial town. ‘Forget about it’ as my good Jersey shore friends would say, I still have fish on Friday. It is the only thing I eat with both a head and eyes.

  

Now I do feel lucky to have lived near the ocean most of my adult years. At least once a week you will find me at the local fish market, or at the dock waiting for the fishing boats to come in after a day at sea. I’ve shopped in the Pike Market in Seattle, Fulton Fish Market in New York and browsed markets all over the world. For me, there is something to say about the fresh saltwater smell of fresh fish. Most of the markets have powerful fans to whirl away the strong smell, but I like it. It reminds me of my love of the sea.

Well, today it’s Friday. Arthur and I left the beach this morning to take the fifteen minute ride into Miami to the Casablanca Fish Market where all sorts of fresh fish can be found. 

  

 Crazy as it seems, I still love the smells every time I open the Casablanca door. I love the noise and the eclectic mix of people who stream in, hovering over the various days catches. 

The simple pleasures of life that mean something are getting easier and easier to find for me. As my grandson would say, ‘it is a big time senior citizen adventure!’  

Come on, Kid. It sure beats Snapchat.
